In 1987, Bobby Ray Hutchins built a cinder-block pit behind a gas station on Nolensville Pike and started selling brisket from a folding table. Word spread fast. Today, Smoke & Bone occupies a converted railroad warehouse in East Nashville — three dining rooms, six active pits, and the same hickory wood Bobby Ray used on day one. Nothing else has changed.
